A Crunchy Bite of Latvian Honey Cake
This is Latvia’s classic layered honey cake, freeze-dried into small, crunchy bites that still carry the full flavour of the original — sweet, slightly tangy and a little bitter, with the rich taste of honey running through it.
It’s handmade by Ozolu Bites, a small Latvian producer, and won a Silver award at the Riga Gourmet Show (Rīgas Gardēžu Skate) in 2024 — the result of experimenting until an ordinary cake could survive being turned into a snack.
Each bite has a light, crisp texture rather than the soft, moist layers of a fresh honey cake, but the flavour is unmistakably the same — many people say it brings back the taste of childhood.
It’s an easy gift for a colleague, a fellow hiker, or anyone who loves honey cake but wants something they can pack without it falling apart.
For travellers, it’s a genuinely practical souvenir: light, doesn’t need refrigeration, and holds up well in a suitcase, backpack or on a hike.
Freeze-drying (sublimation) removes moisture from the cake without high heat, which helps preserve its nutrients. The small pack (50 g) holds about 5-6 pieces, the large pack (100 g) about 10-12. The cake contains wheat, eggs and milk. Once opened, reseal the pack tightly and use within 24 hours.
Ingredients: sour cream, wheat flour, honey, sugar, powdered sugar, butter, eggs, cranberries, milk, baking soda, corn starch, cinnamon, salt.
